Quinoa Burgers

I signed up for a Pinterest account months ago, but never really got into it. Or figured it out. Or something. Anyway, when I was checking out the stats for this very blog the other day, it led me to Pinterest where people had pinned a few posts from the blog. I perused around a bit, and ran across this recipe for quinoa burgers on a friend's board. I guess that's how it works, it gets you browsing. The recipe is from a magazine I like, Whole Living. They suggested serving it "Greek Style", but we just had it like a regular veggie burger on a bun with the fixings. This is really simple to make, the texture is great, and they stay together really well. I liked how I could see the good veggies and beans in the patty. I may add more veggies and more or different seasoning next time, but this was a great start. 

  • 1/2 cup rinsed quinoa
  • 1 medium carrot, cut in large chunks
  • 3 scallions, thinly sliced
  • 15 ounces great northern beans, drained and rinsed
  • 1/4 cup plain dried breadcrumbs
  • 1 large egg, lightly beaten
  • 3/4 tablespoon ground cumin
  • Coarse salt
  • Ground pepper
  • 2 tablespoons olive oil

Bring 3/4 cup water to a boil in a small pan, add quinoa, cover and cook on low for 12-14 minutes. Process the carrot in a food processor until grated. Add quinoa, scallions, beans, breadcrumbs, egg, cumin, salt and pepper and process until well combined but still chunky. Refrigerate the mixture for at least 10 minutes. With wet hands, form the mixture into four patties. Heat the oil in a large skillet and cook on each side for 8-10 minutes. We had ours on whole wheat buns with cheese, lettuce, tomato and pickle. And some (not very pretty!) baked sweet potato fries on the side. Graham ate just about all of his. 

*Quinoa is a great source of protein, and a complete protein, unusual for a veggie source. It's also a great source of fiber as are the beans. The carrots give it a little veggie boost. A great healthful burger alternative.
