Broccoli & Cheese Potatoes

Sometimes I just really want a baked potato. I don't even usually keep potatoes on hand, so I'll actually go order one from the deli down the street. But, feeling a craving coming on, I actually picked some up and had them ready to go when it hit a few days ago. I got all fancy by making a cheese sauce to go on them. First though, the potato. I like to rub them with olive oil and sprinkle with sea salt and prick with a fork a few times before baking. Then, bake them directly on the rack at 350 for 45 minutes. If I'm in a super hurry, I microwave it first for 10 minutes, then bake it for 20-25. While it was baking, I steamed some broccoli and then made this quick cheese sauce.

1 cup milk
4 teaspoons AP flour
1/4 tsp salt
1/2 cup shredded cheddar cheese
1/2 cup gruyere cheese
ground pepper

Whisk together 1/4 cup milk and the flour in a sauce pan. Stir in remaining milk and salt and bring to a boil over medium heat. Reduce heat and simmer for 2-3 minutes until slightly thickened. Remove from heat and stir in cheese and pepper until cheese is melted.

Top baked potato with steamed broccoli and a couple tablespoons of the cheese sauce. Graham loved this. And so did I!

*Potatoes are a great source of fiber, vitamin C and iron. Although they are usually considered a side, dressing them up a bit makes for a great light dinner. If they're dressed up with cheese and broccoli, even a pretty complete dinner.
