Blueberry Birthday Cupcakes

I know...seriously? More cupcakes? Isn't that the last thing I blogged about like three months ago?The deal is, I bake so infrequently that I really feel like I should write it down. And, it was Graham's third birthday. So some cake baking was in order.

I asked Graham what kind of cupcakes he wanted to take to Parent's Day Out for his birthday. He chose blueberry. I feel like this a definite win on my mommy score card. I mean, if you're going to have cake, at least there is some real fruit mixed in, right? I used this recipe but subbed 1 1/4 cups of whole wheat flour for the AP flour. And I used this recipe for frosting, which was just okay. I also baked them in a mini muffin tin for about 12 minutes. They seem easier for kids to handle. The cupcakes tasted like frosted blueberry muffins, but they were all gone so I guess they went over well!


Now, his birthday party cake may  not have been such a win on the healthy mommy card, but it was delicious and his daddy did a fantastic job decorating it, so it deserves a mention. He wanted "black" cake, which we finally determined was chocolate. I found this super easy recipe that turned out great. Rather than do a 9 inch layer cake, I baked it in a 9x14 pan for 40 minutes, then cut the cake horizontally in half to frost the middle, top and sides with this decadent chocolate butter cream. Then I whipped a batch of plain butter cream and made it orange (the birthday boy's choice) for the lettering that G2 did. 


Hard to believe our little guy is three. It's a great age, but one downside...he's very opinionated. About a lot of things. Including food. We'll see how this pans out in the months to come!

  1. i WISH stella's choice of birthday goodies was as healthy. she requested cookies (chocolate chip and sugar) for school, we had hot fudge sundaes on her actual birthday, and at her party tomorrow there will be chocolate cake with vanilla buttercream.

    and then we'll eat nothing but spinach for a week to make up for it!

  2. I'm stealing the hot fudge Sunday idea! You could always use frozen yogurt, but that kind of takes the fun out of it. :) Happy Birthday to Stella, too!
