Lil' Pumpkin Cupcakes

I signed up to bring cupcakes for Graham's fall party at school. I usually sign up for things like cheese, or fruit, so I can try to be healthy and stuff, but those were already taken. So, I went with cupcakes. I figured maybe the pumpkin would add some veggies to the kids' diets.  First, I was totally going to cheat and make this recipe. But, after reading the ingredients on a box of cake mix (um, beef shortening solids, anyone?), I decided to do this one, instead. Other than subbing out some wheat flour for the AP flour, I stuck to the recipe. Since these were mini cupcakes, I only had to bake them for 12 minutes. What I'm most excited about is the frosting. I just did the typical cream cheese frosting, but I had never used a pastry bag and tip before. And look how cute it made them look! Exciting stuff. Full disclosure: I did not look a the ingredients on the candy corns. Sometimes ignorance is bliss.
