Curried Tofu Salad

Back when we lived in the most beautiful place on earth, Sun Valley, ID, I worked at a little restaurant called The Roosevelt. For a short stint, we had a Curried Chicken Wrap on the menu. Although I don't think I ever ate it, I was thinking about it for some odd reason, so this is my veggie rendition. I have lots of great memories of that place!

1 block of tofu, drained and cubed
1 garlic clove, minced
1/2 cup yogurt (no fat)
1 Tbsp mayonnaise (reduced fat)
1 1/2 Tablespoons curry powder
1 small apple, diced
1/4 cup golden raisins
1/4 cup cilantro, chopped
Pita Bread

Cook the tofu and garlic in hot oil over medium high heat until tofu is mostly brown. Meanwhile, whisk together yogurt, mayo and curry powder. Fold in apple, raisins and cilantro. After tofu cools a bit, stir it in to to yogurt mixture. Serve in a pita pocket with lettuce.

We all loved this. Graham kept saying, "I LIKE IT!", and taking a big bite, which was pretty funny.

*I like the addition of fruit to dinner. Raisins are have lots of minerals: iron, magnesium, copper and taste great, too!
