Cheddar, Apple and Roasted Garlic Quesadillas


They were giving out samples of Australian Frontera Cheddar Cheese at Whole Foods the other day, so I had to get some. (I'm a total sucker for free samples. As is my child. He learned what those little sample stands were early on in his grocery shopping career). It is a white cheddar and much softer than other cheddars, and had a great nutty flavor so it went well with apples.

2-3 cups shredded cheddar cheese
2 Pink Lady apples, sliced thin on the madoline
1 head of garlic, roasted and chopped
Multi-grain tortillas

Lightly oil a flat grill pan, and heat one side of the tortilla. Turn and add cheese, apples and garlic. As the cheese begins to melt, fold the tortilla over and flip so nicely browned on both sides.

G2 and I thought these were simply fantastic. Much to my dismay, Graham is getting a little pickier about what he eats (but he's still a pretty good eater, I'm not complaining). But, he did not like the roasted garlic. I guess whole garlic is a bit much for a 2 year old. It's probably a bit much for a lot of adults. But I love it. Anyway, what he did love were the "apple chips".


We also had a little argula salad with avocados. He also doesn't seem to be a fan of any sort of lettuce right now, but he did eat the avocados. Next time I'll just leave the garlic off his, but it's definitely worth trying again.

*This provided two servings of fruit (apples and avocados) plus all of the great omega acids in the avocado. It also provided a serving of dairy and whole grains (from the tortilla).
