Linguine with Walnut Sauce

I keep running across recipes for walnut pasta, so I decided to give it try. It's super simple...I used pre-chopped nuts, so really not even any chopping, outside of the parsley. And, most importantly, Graham ate TWO servings...so it passed the kid test. And the husband test. It will definitely make into rotation around here.

11/2 cups vegetable broth
1/4 cup white wine
1/2 cup walnuts, chopped and toasted
3 Tbsp sour cream or yogurt
1 garlic clove
sea salt and pepper
1 box of whole wheat linguine
parsley, chopped
feta cheese

Cook pasta according to package directions. In the meantime, put broth and wine in a sauce pan and boil until reduced to about 3/4 cup. Add reduced broth, walnuts, sour cream, garlic and salt and pepper into a blender and blend until smooth. Toss cooked pasta with sauce and parsley. Crumble feta cheese over the top. We had this with some garlicky spinach, which rounded it out nicely. Next time I may add in some chopped tomatoes to add a little acidity. It really has a nice flavor. It might also be good with some extra walnuts sprinkled over the top.

*For toddler nutrition, this should satisfy 2 or more servings of whole grains (pasta), 2 servings of vegetables (spinach), 1 serving of protein (from the nuts and cheese).
