Lentil Soup

One of my all time favorite easy, super nutritious, filling and delicious soups is this one from Alton Brown. I mentioned it way back here, but left out any details. I pretty much follow the recipe, but I've never been able to find grains of paradise, so I just leave it out. Sometimes I spice it up a bit with hot sauce or cayenne. Sometimes I throw in some extra veggies like a diced pepper or maybe even some veggie sausage. Graham likes it with a dallop of yogurt. I don't puree it, I like the lentils with a bit of bite. It also makes it easy to drain the soupiness off so it's easier for the not-so-spoon-experienced to eat (although he is much better than he was in that first post!). It makes a ton, so it's great for left overs for the week or to freeze for later. Really, really good.
