Green Curry

Thai food is a mystery to me. But this was a serious short cut that made it a mystery-no-more! I bought a little jar of green curry paste the other day to give it a try. I semi-followed the recipe on the jar...simmered a can of light coconut milk with 1 Tbsp of the curry mixed in on the stove for about 5 minutes. Added a little bit of brown sugar, a few tablespoons of tamari and a little vegetable broth. I cubed a block of tofu and added that along with a bag of frozen veggies (broccoli, cauliflower, and carrots). Simmered it all together until it was hot. We had it over jasmine rice (also frozen...short cut, short cut, short cut!) with some fresh cilantro on top. It was delicious! Best of all, it took about 20 minutes. With tofu for protein and the colorful veggies, it is also nutritious. Graham ate all of the tofu out of his and moved on to his daddy's! We had it for lunch today, but this is definitely going on the short list for hurried week night meals.
