Vegetarian Sloppy Joes

I had always used the Fantastic Foods boxed stuff before, but these were surprisingly easy and delicious! Plus, the fresh veggies add some extra nutritive value. Next time I will add some shredded carrots and celery for even more of a vitamin boost.

For the Joes:
2 Tbsp Olive Oil
1 onion, diced
1 green pepper, diced
1 1/4 c vegetable broth
1 1/4 c TVP (Texturized Vegetable Protein)
2 cups tomao sauce
1 can tomato paste (small can)
1 Tbsp chili powder
1 Tbsp vegetarian Worcestershire sauce
1 Tbsp brown sugar
salt and pepper

Sauté onion and pepper in the olive oil until soft. Add all other ingredients and mix well. Let simmer for 15-20 minutes, stirring occasionally. I served it on whole wheat buns with a slice of cheddar. I left Graham's open faced and cut it up for him. He really liked it!

Of course he also loved the garden fresh cucumber, tomato, feta and basil salad. I dressed the fresh veggies with red wine vinegar, olive oil, garlic and salt and pepper. I also served some corn salad we had left over from the holiday weekend.
