Hummus Veggie Wraps


This was almost like a burrito, but you know, with hummus. And delicious veggies from the garden! On a whole wheat tortilla I spread some hummus, feta cheese, yogurt, sriracha for me and G2, and a lovely veggie salad. For that I used two kinds of tomatoes (cherokee purple and yellow), cucumber, green onion, parsley, olive oil, salt and pepper, lemon and a splash of red wine vinegar.

I am really trying to figure out ways to use cucumbers more than anything. We are getting TONS of cucumbers. I folded Graham's over a bit like a quesadilla to make it easier for him to eat. It was still a bit of a challenge, but he managed alright.

  1. I am loving those Cherokee purple tomatoes. They are so sweet and good! This looks like great hot-day lunch. I have some mango pie that G3 may like if you guys are going to be home this afternoon!
