Quinoa Loaf

I spotted this recipe in the Whole Foods flyer and thought it looked easy and super nutritious. It wasn't especially difficult, but it does require quite a few steps. Certainly not a one pot meal (although it might be good for a make ahead dish). And, I'm not sure the end result was really worth it. I followed the recipe to the T, but mine did not turn out like the photo on their site. I used quick cooking oats and maybe didn't bake it long enough, but mine was pretty mushy in the middle. It still had a pretty good flavor, but was a little bland for me. Graham seemed to like it well enough, but we still have left overs in the fridge from several nights ago, so it must not be that good. (We don't usually keep leftovers for long, on the rare occasion we even have any!). I may try some variation of it in the future, but for now I think I just like my quinoa in the grain form.

The green beans tossed with feta cheese and tomatoes were great and dining outside it always a treat. We have been lucky enough to have several days where we've been able to it and we all love that...no matter what we're eating!
