Easy-Peasy Potato Soup

It's not exactly soup weather, but a friend of mine had surgery over the weekend and I was trying to come up with something that would be easy on her to eat. I made a huge pot of potato soup and kept some out for us. This made a lot of soup! I took her two quarts and we still had plenty for dinner.

2-3 cloves of garlic, minced
onion, diced
5 lb bag of potatoes, peeled and cubed
1.5 quarts of vegetable stock (I like Imagine Organic No Chicken Broth)
milk (I think I put in about a cup...I was just pouring to loosen it up)
1 cup of shredded cheese
salt and pepper

Sautee the onion, garlic and some sea salt in olive oil until soft. Add potatoes and stock to cover. Bring to boil then cover and cook until potatoes are soft. I used an immersion blender to get the potatoes to smooth consistency (it was almost like mashed potatoes) and then mixed in milk to thin it out. Mix in cheese until melted and salt and pepper to taste. Add more stock or milk if needed.

I also made a little relish to top it with diced tomatoes, rosemary, parsley, green onions, garlic and a little olive oil. It really added a nice flavor to it, plus Graham has been loving tomatoes lately. It's not the prettiest dish, but the thickness was great for Graham to feed himself and he loved it! Such a simple dish, but tasty and comforting.
