Tuna Melt

On one of the rare occasions G2 wasn't around for a meal the other day, I made tuna melts. In the tuna salad, I kept it pretty simple with a little light mayo, a squirt of dijon mustard, diced onions, pickles, fresh parsley and a squeeze of lemon juice. I have been using the little sandwich thins for Graham's sandwiches. They are kind of like pita. I think they're easier for him to get through than a big ol' piece of bread. Anyway, I cut one in half and melted some grated cheddar on both halves in the toaster oven. Just smeared a thin layer of the tuna in the middle and pressed it together. The cheese helped hold it all together even though he really likes to to pull the pieces apart and eat it that way. You know, because it's messier.
