Orange-Scented Blueberry Muffins

That makes muffins sound so fancy. It's always fun to make something like muffins on a Saturday morning. I used this easy Better Homes and Garden recipe with a few modifications. In a nutshell:

1 3/4 c AP flour (I used 1 c AP and 3/4 c whole wheat)
1/3 c sugar
2 tsp baking powder
1/4 tsp salt
1 beaten egg
3/4 c milk
1/4 c cooking oil
3/4 c fresh or frozen blueberries (I used frozen)
1 tsp finely grated lemon peel (I used orange)

1. Pre-heat oven to 400. Grease muffin 12 muffin cups. (Although it only made 11 for me)
2. Combine first four ingredients in medium bowl. Make a well in mixture.
3. In separate bowl, mix egg, milk and oil. Add all at once to flour mixture. Stir just until moistened. Fold in blueberries and lemon (orange) zest.
4. Spoon batter into muffin cups 2/3 full. Bake 18-20 minutes. Cool in pans on wire rack for 5 minutes.
5. Eat!

We had ours with strawberries. I can't figure Graham out. For two days, he couldn't get enough strawberries. Kept yelling for more (which consists of pointing and making a loud 'EHHH' noise. Nice). Now he doesn't want them anymore. Maybe tomorrow.
