Black Bean Roll-ups

I made tofu fajitas last week based on this easy recipe from the Whole Foods website. Since Graham can't quite hold onto, nor bite into a full fledged fajita, I went a different route for him. I used a whole wheat tortilla and spread a layer of refried black beans inside. Topped that with a little shredded montery jack cheese and finely diced sauteed peppers (I used red, yellow and orange from our fajitas). I rolled it up and cut into thin little pinwheels. I gave him some of the tofu on the side. They were good, especially dipped in sour cream. I love sour cream. I try to just use yogurt, but every once in a while I splurge and get the good stuff. Unfortunately for Graham, he seems to like it as much as I do.
