Let me just put it out there, this is my second batch of plums and they are a pain in the you know where. They are messy and sticky and kind of gross. I dropped them whole into boiling water for about 10 minutes, then dropped them into an ice bath. The skins are supposed to just 'slip off', but in my experience, they do not. Then they are all mushy and slippery when I try to get the pit out. I end up with plums under my finger nails, skins everywhere and plum stained cutting board.

On the plus side (other than Graham loving them) they make awfully pretty food cubes.
