More Cookies

I got the recipe for these oatmeal banana biscuits from Wholesome Baby Food. I really love that site, by the way.

Oats 'n Nanner Drops

1 c. quick oats
1 c. ground oats (I just used oat flour)
1/4 t. salt
1/4 t. cinnamon or ginger or cardamom (I used cinnamon)
1/4 t. nutmeg (ooops, left this out)
1 t baking powder
1 c. over-ripe bananas (mashed)
1 t. vanilla extract
3 T. Oil (I used canola)

Mix wet, mix dry, add wet to dry. Drop by spoonful on to parchment paper or greased baking sheet. Bake 12-15 minutes at 350.

I formed them into rod shapes rather than drops. These were great for me because I didn't have to pull out the rolling pin and they were much less messy than the first cookies I made. They are pretty good! G2 said they are great for a baby cookie, but for a real cookie, they need more sugar. I think they are plenty sweet. They seem a bit strong on the cinnamon to me, so I may cut that next time. They have a great texture and G3 loves them! I put a few in the fridge and the rest in the freezer. They are very messy once he gets going on one, but they are great to grab and keep him occupied when we go out to eat.
