Finger Foods Abound

Inspired by all of the BLW info I've been reading, I decided to go all in. Sort of. We re-visited sweet potatoes tonight, as sweet potato fries. I just cut a sweet potato into fries, tossed with olive oil, and baked at 385 for about 20 minutes until they were a little brown on the outside and soft in the middle. I actually make these a lot for me and G2, with salt, pepper and paprika. G3 loved them. We were having stir fry with tofu tonight, so I also did some 'tofu fries'. Strips of tofu browned up a bit in the oven. Went over well, too. He had his finger foods along with some peas and squash. He really likes being able to feed himself and it keeps him busy while I do other things in the kitchen or while we eat. Works out for everybody!
